Sancerre white wine can be decanted, this slow natural oxygenation allowing it to develop all its aromatic power.
VINEYARD - TERROIR
The Eric Louis estate extends over an area of 32 hectares around Thauvenay in the Center Val de Loire region (department 18), on the south-eastern slopes of Sancerre.
The vines are planted on a terroir made up of two thirds of clay-limestone and one third of flint, soils perfectly suited to the Sauvignon grape variety, whose white draws its subtle complexity.
VINIFICATION - AGING
Harvests are carried out at night and early in the morning to get the best out of the grapes and preserve their aromatic potential and freshness. The grapes are pressed slowly in order to extract the best from the fruit, the musts are naturally settled by sedimentation at a controlled temperature (8 ° C - 10 ° C) and without the addition of sulphites.
Fermentation lasts 4 weeks at progressive temperatures of 16 ° C to 21 ° C in thermo-regulated stainless steel vats.
The wine rests on fine lees in stainless steel tanks inerted under nitrogen until spring in order to develop its fat and length in the mouth. Bottling is done under nitrogen in order to limit the addition of sulphites.
